Holiday Cast Iron-Smoked Apple Crisp

“Ahh, holidays and apples – forever joined with gladness and tidings of great joy in our hearts!  We live near an orchard and the apples flourish in all their glory by the bushel through late fall. They are ready to rock delicious dessert dishes and sides, come Holiday Cooking Season!  We decided many years ago to put a Yoder Spin on our fave Fitz Crisp by baking it up in a Vintage Cast Iron skillet in our Yoder Smokers pellet cooker and folks, it was a Game Changer!  Here’s a step by step for how we concocted this crowd pleasing dessert!”

INGREDIENTS

  • 2 tbsp unsalted butter
  • 5 Granny Smith apples
  • Pinch kosher salt
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp vanilla
  • Juice of 1/2 lemon
  • 3/4 cup all purpose flour
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup Butter (1 Stick)

INSTRUCTIONS

For Topping:

1)  Combine together Brown Sugar, Granulated Sugar, Cinnamon, Nutmeg, and Salt.

2)  Using your hands (or a mixing spoon), mix sugar mixture with butter, while gradually adding flour (while still mixing). Mix until thoroughly combined.

3)  Set topping aside.

For Filling to End of Cook:

1)  Dice the Apples to your liking.

2)  Heat Butter in Cast Iron Skillet on low/med heat. Once Butter is melted, add Apples and Salt. Cook (stirring constantly) for 3 minutes, still on low/med heat.

3)  Stir in the Brown Sugar, Cornstarch, Vanilla, and Lemon.

4)  Cover Filling with Topping.

5)  Cover with foil and place in pre-heated Yoder Smoker at 350°F, close lid, and bake for 15 minutes.

6)  Remove foil, close lid again, and then let it ride uncovered for 20-30 minutes (just long enough to get a flavor of smoky goodness, but not too much – you will likely never want to bake any pies or crisps any other way, once you taste this), until filling is bubbling (not erupting) and topping is golden brown.

7)  Pull off smoker, let sit on counter until it cools to desired temp. Take BIG whiff of the goodness, then grab a scoop (or three) of it, add some delicious vanilla ice cream or whipped cream on top, let it ooze on down into that warm smoky apple filling, and get ready for a flavor explosion in your mouth!
