1. Pat wings dry and lightly coat with Bear & Burton’s Everyday Hot Sauce.
2. Season generously with Cajun Honey Rub: Spicy Garlicky.
3. Place wings on a wire rack and smoke at 250F using Bear Mountain BBQ Gourmet Blend pellets until wings reach 165F internal.
4. Heat beef tallow to 350F and flash fry wings until crispy and they reach about 190F internal.
5. Melt butter, stir in honey and Cajun Honey Rub until smooth.
6. Toss wings in the Cajun honey butter sauce and serve hot.
