Bourbon Peach Cobbler on the Loaded Wichita

It’s super easy to make and best thing is, it can be adjusted to whatever fruits you’ve got kicking around that need to be used up! Got berries? No prob! Got mangoes? Sure why not! It’s good with everything and anything!”

INGREDIENTS

  • 5 med/large peaches - sliced
  • 1/4c sugar
  • ~1/4c bourbon

  • For topping
  • 1c AP flour
  • 3/4c sugar
  • Pinch salt
  • 1tsp baking powder
  • 1tsp vanilla
  • 1/2c butter - melted
  • 2Tbsp brown or raw/turbinado sugar

INSTRUCTIONS

  • Preheat grill to 350°F
  • In large bowl, mix peaches, sugar & bourbon. Toss around until well mixed.
  • Place fruit mixture in a greased 10” cast iron skillet or oven safe dish and set aside.
  • In a separate bowl mix all of the topping ingredients (except for the brown sugar). Mix until you’ve got the consistency of cookie dough.
  • Spoon dollops of topping all over the fruit mixture.
  • Bake until topping is cooked through and starting to brown. (Approx. 30-35min)
  • Sprinkle brown sugar all over the top and continue to bake until sugar has melted and topping is golden brown. (Approx. 5min)
  • Remove from grill and let cool for 10-15min. Enjoy!
