INGREDIENTS

  • 4 lbs Chicken Thighs, sliced thinly
  • 1.5 lbs Bacon, sliced
  • 1/2 Cup Meat Kingz - Kingz Gold chicken/pork rub

INSTRUCTIONS

  1. Prepping the Chicken: Pound the chicken thighs until about ⅛” thick. Lay them out in a base layer about 2.5 feet long and 1 foot wide.

  2. Layering: Add a layer of bacon on top, then finish with a layer of chicken. Wrap it all up in foil and place in the freezer for 1–3 hours to firm up.

  3. Preheat the Smoker: Set your smoker to medium heat (about 250°F).

  4. Skewer Time: Remove the meat and cut it into 2×2” cubes. Thread onto small skewers and season generously with your favorite sweet and spicy rub.

  5. Smoke it Up: Place the skewers in the smoker and cook slowly for 35–40 minutes, or until the chicken reaches 165°F.

  6. Finish Strong: Let the skewers rest, then brush with sweet and spicy BBQ sauce. Garnish with parsley for a final touch.
