Fitted with eight, 30” square racks positioned 4″ apart you can load up all eight or remove every other rack to increase cooking height. Another standout feature to the Stockton’s design is the variable damper located between the firebox and the cooking chamber. This damper allows the pitmaster to control the flow of heat and smoke into the pit, and fine-tune temperature adjustments as desired. At the top of the cook chamber, you have additional control with a dampened smoke stack, along with door-mounted Tel-Tru temperature gauges to track your temps. Additionally, the cooking chamber features two draw latches to keep the door snug from top to bottom and prevent heat loss.
