HERB-ROASTED SMASHED POTATOES

These super simple scrumptious Herb Roasted Smashed Potatoes are the perfect comfort food. Chef Tom cooks and smashes red roasted potatoes with minimal ingredients on the Yoder Smokers YS480S pellet grill, and the texture and flavor will have you craving these any time potatoes are on the menu!

INGREDIENTS

  • 3 lb baby red potatoes
  • 1 tbsp fresh rosemary, minced
  • 1 tbsp fresh sage, minced
  • 1 tbsp thyme leaves, minced
  • 2 tbsp Saica Sicilian Extra Virgin Olive Oil
  • 1 tbsp Cattleman’s Grill Trail Dust All-Purpose Seasoning
  • 1/2 cup (1 stick) unsalted butter
  • Noble Saltworks Pecan Smoked Finishing Salt, to taste

INSTRUCTIONS

  1. Preheat your Yoder Smokers YS640s Pellet Grill to 425ºF, set up for indirect grilling (diffuser installed).
  2. Rinse the potatoes. Place them in a Lodge 12” Cast Iron Skillet.
  3. Add the Saica Sicilian Extra Virgin Olive Oil and herbs and toss to coat. Season with Cattleman’s Grill Trail Dust All-Purpose Seasoning.
  4. Cover the skillet with a lid and cook until the potatoes are tender and smash-able, about one hour.
  5. Add the butter and let it melt. Smash the potatoes with a hand masher. Taste and season with Noble Saltworks Pecan Smoked Finishing Salt, to taste.
