Pizza Oven Stuffed Shells

“Alright guys and gals, for this Pizza Oven Stuffed Shells recipe you are gonna want to set up your Yoder Smokers Wood-Fired Pizza Oven and then fire up your Yoder YS640S pellet grill to 500 degrees. I have done this recipe on my Yoder before and these stuffed shells were amazing. Once I tried it out on the Yoder pizza oven it was a total game changer. So grab a beer and let’s get after it!”

INGREDIENTS

  • 1 lb Ribeye or Ground Chuck
  • 10-12 Jumbo Shells
  • 1 cup shredded Mozzarella

  • SAUCE (or your favorite jarred sauce)
  • 1 T Olive Oil
  • 1 Can Tomato Sauce
  • 1 Can Italian Stewed Tomatoes
  • 1 Small Can Tomato Paste
  • 1 T White Sugar
  • 2 tsp Garlic Powder
  • ½ tsp Italian Seasoning
  • ½ tsp Dried Oregano
  • ½ tsp Marjoram
  • ¼ tsp Basil
  • Salt to Taste

INSTRUCTIONS

  1. Preheat the Yoder Wood-fired oven to 500°F.
  2. Add olive oil and tomatoes to a sauce pot.
  3. Saute briefly then add remaining ingredients.
  4. Bring to a low simmer and lightly hit it with an immersion blender and season to taste.
  5. Grind up your ribeye and add to a frying pan over medium high heat.
  6. Saute meat and season with garlic powder, Italian seasoning, oregano, and marjoram.
  7. Add your sauce and season to your liking, then set aside to cool.
  8. Boil shells in salted water until al dente and set aside to cool.
  9. In a cast iron pan add enough ragu to cover the bottom with a thin layer.
  10. Stuff shells with ragu and place in cast iron.
  11. Once all shells are stuffed, add remaining ragu to pan and top with shredded mozzarella.
  12. Slide cast iron pan into Yoder Wood-fired oven and let that cook for about 5 min.
  13. Next, rotate 180 and let cook until all is bubbly and hot.
  14. Finally, top with grated parmesan. Enjoy!
