Creamy Smoked Queso

“This smoked queso on the Yoder Smokers YS640S pellet smoker is guaranteed to be an absolute hit at your summer BBQ and is the perfect game-day snack. You get that subtle smoky flavor that beats any queso out of the kitchen and leftovers are not happening! Serve alongside Tortilla chips, Pita chips or use as a topping on Hot Dogs or Baked potatoes. The combinations are endless!”

INGREDIENTS

  • 1 Large Block of Velveeta Cheese
  • 1 Can of Light Beer
  • 1 lb Ground Beef - Cooked and drained
  • 1 Cup Smoked gouda - Shredded
  • 1 Cup of Cheddar Cheese - Shredded
  • 1 Can of Cream of Mushroom Soup
  • 2 Cans of Black Beans - Rinsed
  • 2 Cans of Rotel
  • 2 Bell Peppers - Diced
  • 2 Jalapeño Peppers - Diced
  • 1 Large White Onion - Diced
  • 3 Tbsp Taco Seasoning/ Tex-mex Seasoning
  • 2 Tbsp Cilantro - Finely Diced

INSTRUCTIONS

1. Fire up your Yoder Smokers and preheat it to 250 degrees.
2. Dice Peppers and Onion.
3. Cube Velveeta into smaller blocks and place into a foil pan.
4. Add in Shredded Cheese, Black Beans, Peppers, and Onion.
5. Pour in Rotel, Cream of Mushroom Soup, Taco Seasoning, and 1 can of Light Beer
6. Place pan into the BBQ, cooking indirect at 250 degrees.
7. After 45 minutes add in finely diced cilantro, begin to stir and continue to stir every 20-30 minutes until consistency is smooth. Serve warm and Enjoy!
