Texas Two-Step Turkey on the YS640S

Texas Two-Step Turkey on the Yoder Smokers YS640S by Smokin’ Joe Martinez

“The Texas Two step method consists of smoking a turkey at a low temperature of 225° for the first step. Smoking the turkey at a low temperature allows the turkey to get a good smokey flavor. The “Two Step” portion of the cook simply means you raise the temperature of the smoker to 450° for the remainder of the cook to crisp up the skin.” Thanks, Joe!
