Chicken and Carnitas Sauce

INGREDIENTS

  • Fresh chicken breasts
  • Fresh asparagus
  • Oak pellets
  • Neil Sarap Gourmet Lemon Pepper
  • 2 lemons
  • Olive oil
  • 1 tsp lemon zest
  • 1/4 cup lemon juice

INSTRUCTIONS

  1. Put the fresh chicken breast in a Ziploc bag with some olive oil
  2. Next add in Lemon juice, lemon zest and @neilsarap gourmet lemon pepper
  3. Let this sit in the marinade for about an hour before going on the grill
  4. While the chicken is marinating, wash and trim the asparagus
  5. Put the asparagus into a preheated pan with some olive oil over medium heat until the color darkens
  6. Next, fire up the Yoder Smokers YS640 pellet grill and set the temp to 350°F
  7. Cook the chicken over the direct flame, flipping and rotating until an internal temp of 165°F
  8. With the asparagus ready and chicken rested a few minutes it’s time to slice and plate
  9. To plate I added a drizzle of @terrapinridgefarms carnitas grill sauce to both the chicken and the veggies a drizzle.
