SMOKED SWEET POTATOES WITH ADOBO LIME SAUCE

INGREDIENTS

Smoked Sweet Potatoes:
  • 2-3 large sweet potatoes (scrubbed, skin on)
  • 2 Tbsp olive oil
  • 3 Tbsp Cattleman’s Grill Provisioner’s Seasoning
  • Pitmasters Choice Pellets - Gourmet Competition Blend
  • Adobo-Lime Sauce:
  • 1 cup Kewpie mayonnaise (or you can substitute Duke’s for some zing or regular Hellman’s mayonnaise)
  • 2½ Tbsp adobo sauce (from canned chipotles in adobo)
  • Juice and zest of 1 lime
  • 1½ tbsp Cattleman’s Grill Provisioner’s Seasoning
  • Toppings:
  • 4–5 slices prosciutto
  • 1 ripe peach, thinly sliced
  • Fresh basil leaves
  • Extra rosemary, for garnish
  • Balsamic glaze, for drizzling
  • INSTRUCTIONS

    1. Fire up your YS640S Pellet Grill to 400°F using the Gourmet Competition Blend pellets.
    2. In a large pot, bring salted water to a boil. Add sweet potatoes and boil until fork-tender, about 20–25 minutes.
    3. Remove potatoes, let cool slightly, then slice into ½” medallions, leaving the skin on.
    4. Drizzle both sides with olive oil and season with Provisioner’s Seasoning.
    5. Place on the top rack of the smoker. Smoke for about 45 minutes, flipping halfway through, until the edges are golden and slightly crisp.
    6. Meanwhile, in a small bowl, mix all sauce ingredients until smooth and well combined.
    7. Remove potatoes from the smoker and serve warm with the adobo-lime sauce.
