INGREDIENTS
Smoked Sweet Potatoes:INSTRUCTIONS
- Fire up your YS640S Pellet Grill to 400°F using the Gourmet Competition Blend pellets.
- In a large pot, bring salted water to a boil. Add sweet potatoes and boil until fork-tender, about 20–25 minutes.
- Remove potatoes, let cool slightly, then slice into ½” medallions, leaving the skin on.
- Drizzle both sides with olive oil and season with Provisioner’s Seasoning.
- Place on the top rack of the smoker. Smoke for about 45 minutes, flipping halfway through, until the edges are golden and slightly crisp.
- Meanwhile, in a small bowl, mix all sauce ingredients until smooth and well combined.
- Remove potatoes from the smoker and serve warm with the adobo-lime sauce.
