INGREDIENTS

WINGS:
  • Chicken wings
  • Duck fat spray
  • Meat Church Dia De La Fajita rub
SAUCE:
  • Butter
  • World Harbors Fajita Marinade
  • Melinda’s Mexicana Hot Sauce
  • Candied jalapeños
  • Hot honey
GARNISH:
  • Fresh cilantro
  • Crumbly Mexican cheese
  • Fresh lime juice

INSTRUCTIONS

1. Prep: Hit wings with duck fat spray and coat heavy with Dia De La Fajita rub.
2. Smoke: Run at 275°F for 1 hour until they’ve got solid color.
3. Kiss the fire: Move over direct heat to crisp that skin up.
4. Sauce it: Melt butter and mix in fajita marinade + Mexicana hot sauce + candied jalapeños + hot honey. Heat until smooth and sticky.
5. Glaze: Toss wings in the sauce once crispy and let it set.
6. Finish: Cilantro, crumbly cheese, fresh lime squeeze.
