Bacon Wrapped Chicken Bites

“NGL, these were absolutely insane. I saw this from a video Heath Riles did and I’m so glad I tried it out. It sounds simple but the flavor when you do it this way is one of the best chicken bites ever. I happened to stop by a local coffee shop in Tulsa and grabbed some candied jalapeños and my goodness. BBQ Candy! TRY IT!”

INGREDIENTS

CHICKEN BITES:
  • Chicken thighs or chicken breasts, cubed
  • Bacon, sliced in halves or thirds
  • Heath Riles Cajun Creole Garlic Butter seasoning
  • Heath Riles Honey Rub
  • Brown sugar
GLAZE:
  • Heath Riles Brown Sugar Honey Habanero glaze
TOPPING:
  • Candied jalapeños

INSTRUCTIONS

  1. Prep: Cube-up chicken thighs or breasts and season with Heath Riles Cajun Creole Garlic Butter and Honey Rub.
  2. Wrap: Wrap each piece with bacon, using halves or thirds depending on the size of the chicken chunks.
  3. Sweet heat layer: Mix brown sugar with a little extra Cajun seasoning and sprinkle all over the wrapped bites.
  4. Smoke: Run smoker at 275°F until the bacon is rendered and crispy and the chicken is fully cooked.
  5. Glaze: Brush or toss with Heath Riles Brown Sugar Honey Habanero glaze and continue smoking for 15 minutes.
  6. Finish: Top with candied jalapeños.
