INGREDIENTS
MAIN INGREDIENTS:- 2 large boneless, skinless chicken breasts (about 2 lbs)
- 1 juicy pineapple, cut into 1 1/2-inch chunks
- 2 vibrant red bell peppers, cut into 1 1/2-inch pieces
- 1 large onion, cut into 1 1/2-inch pieces
- 12 strips of thick-cut bacon
- 1 1/2 cups pineapple juice
- 1 1/2 tablespoons cornstarch
- 1/2 cup brown sugar
- 2 tablespoons soy sauce
- 1/2 teaspoon salt
INSTRUCTIONS
1. Make the Sauce: In a saucepan, combine all sauce ingredients. Bring to a boil, then reduce heat and simmer for 2 minutes. Set aside.
2. Assemble the Kebabs: Wrap bacon around chicken and pineapple, skewer bell pepper and onion with bacon. Brush with oil.
3. Grill Time: Preheat the grill to medium-high. Grill kebabs for 10-15 minutes, turning for that perfect char!
4. Serve: Slather with that heavenly Hawaiian sauce and enjoy every bite!
Pro tip: To ensure the chicken stays moist, cook it hot and fast. This method helps seal in the juices and keeps the meat tender.
